VALENTINE'S DAY THEMED CUPCAKES
For these I didn't use any fancy recipes most were just a basic white or chocolate cake (some even cake mix), the main focus was to make them pretty!
ST. PATS DAY CUPCAKES
Some simple cupcakes just used chocolate and buttercream icing. For icing I used a larger star shaped icing tip for piping.
Here is a general icing recipe I like to use:

1/2 c. Butter

1/2 tsp. vanilla
-
4 tbsp. milk
-
1 lb. powdered sugar, sifted
Mix ingredients and adjust sugar and milk as needed. These measurements are not concrete just a good part to start off of.
You can play around with these measurements while creating the icing, to arrive at the consistency you like.
I sometimes like to substitute Earth Balance (butter) and almond milk for the milk. My only comment would be is the icing does not hold its form as well with earth balance as it seems to be softer.

PEANUT BUTTER CUP CAKE

CAKE:

1 cup creamy peanut butter

½ cup butter-flavored shortening

1 cup buttermilk
-
2 eggs
-
2 teaspoons vanilla
-
2 and ¼ cup ap flour
-
1 and ¼ cup sugar
-
1 and ¼ tsp baking soda
-
1 teaspoon baking powder
-
¼ salt
STEPS:

Preheat oven to 350 degrees.

Whisk together all dry ingredients in bowl.

In separate bowl mix shortening and peanut butter until well blended.

Mix dry ingredients into wet. Do not over mix.

Pour into 2 (9 inch) round cake pans.

Bake for 25-27 minutes.

Let cakes cool before frosting.
ICING:

1/2 cup butter, softened
-
1 cup creamy peanut butter​

1-3 tbls of milk
-
2 cups powdered sugar
STEPS:

Mix butter and peanut butter in bowl.

Slowly add in sugar and a bit of milk (as needed) until consistency isn nice and fluffy.
GANACHE:

9 oz Semisweet (or bittersweet) chocolate chuncks
-
1 Cup Heavy Cream
STEPS:

Bring cream to a boil, pour over chocolate and stir to melt.
* If I were to change anything, it would be making the cake chocolate instead of peanut butter, I think that may help balance the flavours. Also found this and it looks awesome:
